Have you ever wondered how food scientists duplicate an ingredient or a competitor’s product? There are many reasons why scientists need to perform culinary detective work. Ellen will teach us her tricks of the trade and a few tips that you can utilize at home.

Ellen Bradley, CFS, Founder & Principal Food Scientist, River City Food Group
Ellen is a Certified Food Scientist (CFS) and works as the Principal Food Scientist for River City Food Group LLC. Projects range from new product development, reverse engineering, labeling and quality programs to aiding start up businesses with food safety programs. Her most recent federal project was a contract with NASA to reduce sodium in 29 foods for use in space.
Ellen holds a degree in Food Science & Technology from Oregon State University. She has over 30 years of experience in the food industry and is a lifetime member of Phi Tau Sigma. She is currently a professional member and Fellow of the Institute of Food Technologists (IFT).
