Enology (the science of winemaking) and viticulture (the science of grape growing) are the twin disciplines behind every great bottle of wine. In the Enology and Viticulture option, you’ll gain a strong scientific foundation in wine production while also exploring how vineyard practices—from soil management to grapevine physiology—shape the flavor, aroma, and quality of wine. Coursework blends microbiology, chemistry, horticulture, botany, and crop and soil science, giving you a full understanding of the journey from grape to glass.

Graduates of this program leave with the knowledge, technical skills, and critical thinking ability to craft exceptional wines or excel in careers that require expertise in grape production and winemaking. Along the way, you’ll dive into topics such as vineyard management, wine production principles, analysis, and sensory evaluation, as well as an introduction to the broader world of wines, beers, and spirits.

Oregon State Universities B.S. in Food Science and Sustainable Technologies degree is an IFT HERB- Approved Undergraduate Program (The Institute of Food Technologists’ (IFT) mission and vision, the IFT Higher Education Review Board (HERB) rigorously assesses undergraduate food science programs that meet its high IFT Undergraduate Education Standards for Degrees in Food Science. Additionally, HERB provides the department with assessment guidelines and resources to facilitate a quality education for each student who participates in our program.

Upon successful completion of the program, students will meet the following learning outcomes:

  • Identify and explain essential foundational principles in Food Science: Food Chemistry and Analysis, Food Safety and Microbiology, Food Processing and Engineering, Sensory Science.
  • Integrate and apply scientific principles to describe complex food systems and solve problems in Food Science.
  • Effectively express themselves orally, graphically, and in writing.
  • Engage in activities that enhance their professional development.

 

Oregon Wine Research Institute (OWRI)

The Oregon Wine Research Institute advances research and innovation in viticulture and enology to support the Oregon wine industry. While OWRI does not offer academic degree programs, its research mission is closely connected to undergraduate and graduate education at Oregon State University through faculty-led teaching, research, and industry engagement. 

Students interested in viticulture and enology at OSU pursue their degrees through academic programs in the College of Agricultural Sciences, with opportunities to engage in OWRI-affiliated research depending on interests and availability. OWRI & Erath Family Foundation Undergraduate Scholars Program

OWRI administers a competitive undergraduate research program supported by the Erath Family Foundation. Selected students work on faculty-mentored research projects related to viticulture, enology, fermentation science, sensory science, and wine production systems.
