Beaver Classic is the flagship brand of student-made products in the College of Agricultural Sciences at Oregon State University.
We began in 2012 with cheeses, and has since expanded to include meats, honey, ice cream, produce, and other products that showcase OSU’s dedication to training the next generation of leaders and shaping the future of food.

The Student Experience
Hands on Marketing for OSU's Ag and Food Business Students
Students in Oregon State University's Agricultural and Food Business Management (AFBM) major recently had the opportunity to collaborate with the College of Ag marketing team on market research and promotion efforts for Beaver Classic, the line of food products made by OSU students.
The AFBM students, who are part of the Department of Applied Economics, engaged in hands-on learning with market analysis and research, and designed a marketing strategy for a new product. We will continue to incorporate Beaver Classic into AFBM courses to provide students with opportunities for project-based learning.
Beaver Classic Products: Crafted by Students
The Oregon State University College of Agricultural Sciences has launched an online retail store to sell cheeses, honey and beef jerky made by its students.
For nearly 10 years, students in the dairy program in the Department of Food Science and Technology have sold Beaver Classic cheeses online and at the Corvallis Farmers’ Market. Now they have expanded the Beaver Classic brand with the new online store and the honey and beef jerky, with more products planned soon, such as beer, meats and produce.

Oregon's artisan cheese industry ages well with OSU's help
Lisbeth Goddik, the dairy processing specialist with the Oregon State University Extension Service, provides training for all levels of artisan cheese makers, including assistance with improvements in product quality, shelf-life and safety. She consults closely with them to solve specific challenges, and she serves as a technical liaison with the Oregon Department of Agriculture's Food Safety Division. Establishment of an artisan cheese industry gives dairy producers the opportunity to earn greater returns for specialty products they make on their farms.
