In addition to our signature Cheddars: The Cheddar and Smoked Cheddar (2016 ACS award winner) and our Swiss, we've added an extensive line of cheddars including an aged cheddar, soaked, and flavor infused cheddars, as well as The Provolone and a new line of Goudas!

Where Can I Buy Beaver Classic™ Cheese?

Beaver Classic™ Cheese is sold at the Corvallis Farmer's Market each Saturday (April - October), at all home OSU Beaver football games, and through our online marketplace.

Please note that shipping is suspended each year from May 1 - October 1, however you may still order online and schedule your order for pick-up.

The Cheddars

The Cheddar - Creamy, young cheddar developed by Creamery students. Buttery flavor with a smooth finish.

 

Smoked Cheddar - Applewood smoked cheddar with a very creamy texture. Awarded American Cheese Society's 2016 Third Place for the smoked cheddar category.

 

Beaver Reserve - Our cheddar aged at least 3 years. Crumbly, sharp and tasty! Smoked Beaver Reserve - Our Award winning Smoked Cheddar aged at least 3 years and smoked with apple wood.

 

Smoked Gochu Cheddar - Our delicious cheddar mixed with Korean red chile flakes (Gochugaru). This pepper has a complex flavor profile with spicy, sweet, and slightly smoky tastes. We then smoke it with apple wood.

 

Cider Soaked Cheddar - Our Cheddar soaked in hard cider made by OSU students. The cider gives a fresh apple flavor to our tasty Cheddar.

 

Pinot Noir Soaked Cheddar - Besides the beautiful color that the Pinot imparts on our Cheddar, the subtle savory flavors enhance the cheddar's rich taste. The Pinot Noir is made by OSU students with grapes from OSU vineyards.

 

Porter Soaked Cheddar - Our Cheddar soaked in Porter made by OSU students. If you like Porter, you will love the flavor of this cheddar.

 

Rosè Soaked Cheddar - The floral and fruity flavor of Rosè comes out in this Cheddar. Enjoy this by itself or with your favorite charcuterie assortment.

 

The Goudas

Gouda - Our young Gouda has a delicate and mild flavor with a smooth and supple texture.

 

Smoked Gouda - Our young Gouda has a delicate and mild flavor with a smooth and supple texture. Smoked with real apple wood. Real smoke = real flavor.

 

Waxed Gouda - A traditional waxing of our young Gouda to extend the longevity of the creamy texture and mild flavor.

 

The Provolone

The Provolone - Not your everyday provolone. Aged at least 2 months. Sharp in flavor and creamy in texture. You will want to top you next cheesesteak sandwich with our provolone.

 

Smoked Provolone - Not your everyday provolone. Aged at least 2 months and smoked with apple wood. Sharp in flavor and creamy in texture. You will want to top you next cheesesteak sandwich with our provolone.

 

Swiss

Swiss - A flavorful Swiss with a creamier texture and no holes. Aged at least 4 months. This cheese will remind you why you love Swiss cheese.
